Healthy SoulFood Recipe

Here you go! Chunks of smoked turkey leg atop a bed of slow cooked collard greens with a sweet potato/red beet medley accented with cinnamon and black walnuts…

Sounds “extra fancy,” right? lol

Heck No!  This is the easiest recipe ever!

Buy a bunch of fresh collard greens, take out the stem and tear them up into 1 inch pieces. Wash the greens thoroughly. So far, you have just completed the most difficult part!

Next, add 3 cups of water into a crockpot.

Add 1 to 2 smoked turkey drumsticks. You can get these at just about any meat section. Just make sure that they are smoked.

Add the greens and then and a half teaspoon of salt and a half teaspoon of pepper.

Let this cook in the crockpot for 3 to 6 hours on low. Make sure to come back and watch the dish so you can reposition and turn the greens every hour or so.

Here’s how I make the sweet potato Turnip dish:

Use unrefined coconut oil to coat a oven safe dish. Cut up a couple of sweet potatoes and 1 bunch of red beets. Sprinkle a little cinnamon to taste and about a 1/4 cup of black walnuts. Cover and place in the oven for one hour. Take them out when you can easily poke them with a fork with no resistance.

That’s it! Super easy to make.
